DOM TASTE

The Karst That Smells of Fire, Passion, and Wonder

Two Days. One Single Mantra: Living Flavor.
Those who were there know: the third edition of DOM TASTE EXPERIENCE was not merely a gastronomic event but a true sensory journey into the heart of the Karst. And I was lucky enough (and bold enough!) to experience it all in one go. We gathered at Borgo Grotta Gigante, in the evocative garden of Dom Bistro, among dry-stone walls, the aroma of herbs, and that summer breeze that already whispers of vacation. There, where time seems to slow down, a festival of taste came to life—captivating the eyes, the heart, and the palate.

A Special Edition? I Would Say So.
For the first time, the event spanned two days – Saturday and Sunday – and the result was explosive. It wasn’t just more time to sample; it was more time to live, breathe, and savor every corner of the festival.

Street Food Non StopA trip around the world in bite-sized portions. From chicken tacos and “Taste” hamburgers to veggie bao, fish & chips, and fried gnocchi, there was no room for boredom (nor for diets). The pace? Relentless. The hunger? Fully satisfied. But never subdued.

Barbecue Haven – Sacred Fire and Live MeatHere, the cult of the grill is akin to a religion. From the starring suckling pig to lamb ribs, wagyu, and diaphragm, every bite was an ode to meat prepared just right. The Saturday Rib Event was particularly memorable—a celebration for true connoisseurs.

Fish Market – Raw and Unfiltered

Oysters, shrimp, scampi, Zobec salmon, seabass tartare… a slice of the sea right in the heart of the Karst. Saturday evening’s tuna enchanted the guests, but Sunday’s selections delivered a twist, climaxing in a live cooking session by the starred chef Uroš Fakuč: risotto with scampi and parsley powder. Absolute chills

Truffle Corner – The Scent That Commands

Ricotta Zidaric, tartare, and a soft omelette that spoke straight to the soul. An intense, refined, irresistible aroma that left no one indifferent.

Deli and Bread – Substance Matters

Peja’s bakery and the cured meats from Bajta and Zbogar reminded us that sometimes all it takes is the perfect slice to feel right at home. The knife-cut mortadella? Simply poetic.

Brewery – Fermentations in Celebration Whether light, amber, raw, or cask-conditioned, here we drank with a smile. Between toasts and friendly chats, I discovered nuances in beer I never even knew existed.

Patisserie by Charlotte – Sweetness Without Shame

Little pastries that melted in your mouth, cakes that seemed to suspend time. And yes, I indulged—over and over again, with no regrets.

Wine Corner – Lively and Authentic Wines

From Saturday evening’s pure Movia to the robust tones of Edi Kante on Sunday, it was a continuous toast to the excellence of the region. And what a region it is!
Among the partners: Skerk, Zidarich, Fon, Radovic, Burja, Marta Venica, Kante… the crème de la crème of Karst wines, all united in celebration.

Music, Atmosphere, and Happy Children

Live music in the afternoon, DJ Carsolina in the evening, and a relaxed atmosphere—meticulously curated in every detail but never snobbish.
And the best part? Children running freely on the lawn, darting between meatballs and slices of bread, without disturbing a soul. Here, food is for everyone: big and small, passionate and curious alike.

Special Guest

Two exceptional guests at the event were prominent names in Italian haute cuisine: Matteo Metullio and Davide De Pra. A dynamic duo, not only in the kitchen but also in their shared culinary vision that blends technique, creativity, and deep respect for raw ingredients.

Matteo Metullio, originally from Trieste, was one of the youngest chefs in Italy to earn a Michelin star, and today, together with Davide, he leads the renowned Harry’s Piccolo restaurant in Trieste, proudly holding two Michelin stars. (Their new culinary home will be ready soon—and reservations are already open!)
Their cuisine strikes the perfect balance between local tradition and innovation—a journey that begins on the Adriatic coast and stretches to the farthest frontiers of flavor.

At the event, they presented a dish that paid true homage to the Italian summer: risotto with tomato, basil, burrata, and anchovies.
A burst of Mediterranean flavors—where the sweetness of the tomato meets the savory depth of the anchovies, the freshness of basil melts into the creaminess of burrata… all wrapped up in a risotto that—needless to say—was riding the wave of the perfect risotto.

A Round of Applause for the Visionaries

Alex & Alexander, the two young hosts, have created something truly unique. DOM TASTE EXPERIENCE has become an unmissable event, growing more every year while remaining faithful to its essence: quality, passion, territory, and a pinch of madness.

 

Save the Date

This year has ended—and it was a masterpiece. But mark your calendars for June 2026. Because when the Karst calls, the palate responds. And DOM TASTE is the perfect occasion to surrender to temptation.
